Our Welsh Cakes follow the generosity of Glenys Lewis, our elderly neighbour for many years, who has sadly passed away. She gave her recipe to Viv many years ago but Viv has now amended the recipe further to produce new free-from options: a gluten-free version, a sugar-free version and a vegan (egg-free, dairy-free) version of the traditional Welsh Cake..
Welsh cakes can be kept in the freezer, if you want them to last a little longer.
